Artichoke Pizza with Fig and Scamorza Cheese

This artichoke pizza combines the earthy taste of artichokes with gooey strong cheese and the sweetness of tomatoes.

Note: If you cannot find scamorza cheese you can replace with provola, provolone or a firm mozzarella. You can also try with a matured cheddar, but the gooeyness is not the same.

Prep Time: 15 minutes

Cook Time: 11 minutes


  • One 15-oz  (425 g) can of tomato sauce
  • 1 tsp dried oregano
  • 2 tbsp olive oil
  • Salt as desired
  • 1 pizza dough floured
  • 7 oz (200 g) mozzarella – chopped
  • 3.5 oz (100 g) scamorza cheese -sliced
  • 1 ¾ oz (50 g) artichoke hearts from a jar
  • 1 handful arugula
  • 2 figs
  • 1 tbsp pine nuts


  1. Place your floured pizza dough on a baking tray with parchment paper and bake for 8 minutes at 475oF (250oC)
  2. Take out the baked pizza dough from the oven
  3. Mix the can of tomato sauce with dried oregano and olive oil and spread it onto the pizza
  4. Add sliced mozzarella, scamorza cheese and artichoke hearts from a jar onto the pizza
  5. Bake at 475oF (250oC) for 3 minutes
  6. Take out the pizza from the oven, add a handful of arugula, figs and pine nuts
