This flavorsome gratin is layered with tender zucchini, sweet red bell pepper and oozy melted cheese, baked until golden. This makes a great side to roasted chicken!

Ingredients:
- 2 large eggs (100g)
- ¾ cup (200ml) milk
- 2 red bell peppers
- 1 zucchini
- 2 tbsp olive oil
- 1 tbsp herbes de provence
- 2/3 cup (100g) feta cheese
Steps:
- Whisk the eggs with milk in a bowl
- Slice the red bell peppers and zucchini
- Sauté the bell peppers and zucchini in a Dutch oven with 2 tbsp of olive oil on medium heat for 10 minutes
- Add in pepper, salt and herbes de Provence for taste
- In a gratin dish, pour the whisked eggs and place the peppers and zucchinis in a fun pattern on top
- Top with feta cheese and bake at 350oF (180oC) for 30 minutes
