Bell Pepper and Zucchini Gratin with Feta

This flavorsome gratin is layered with tender zucchini, sweet red bell pepper and oozy melted cheese, baked until golden. This makes a great side to roasted chicken!

Serves: 4

Prep Time: 10 minutes

Cook Time: 40 minutes

Ingredients:

  • 2 large eggs (100g)
  • ¾ cup (200ml) milk
  • 2 red bell peppers
  • 1 zucchini
  • 2 tbsp olive oil
  • 1 tbsp herbes de provence
  • 2/3 cup (100g) feta cheese

Steps:

  1. Whisk the eggs with milk in a bowl
  2. Slice the red bell peppers and zucchini
  3. Sauté the bell peppers and zucchini in a Dutch oven with 2 tbsp of olive oil on medium heat for 10 minutes
  4. Add in pepper, salt and herbes de Provence for taste
  5. In a gratin dish, pour the whisked eggs and place the peppers and zucchinis in a fun pattern on top
  6. Top with feta cheese and bake at 350oF (180oC) for 30 minutes
