What you’ll need: A basic blender is all it takes to blitz the cruciferous vegetable into rice-sized pieces. If you use a food processor, you’ll likely end up with crumbs of cauliflower instead. Pass!


How to make it: The biggest mistake people make when blending cauliflower into rice is starting with florets that are too large. You need nicely chopped cauliflower for your blender to do the job well. Once you’ve got your chopped veg, pulse it in a blender until reduced to rice-sized pieces. You may need to stop and stir occasionally in order to finish the job. Just rearrange the cauliflower in the blender, and then resume blending.


Tip: Just like zucchini noodles, you can prep a big batch of this starch swap and store it in an airtight container in your fridge. It’ll stay fresh for days on end and save you time when you’re ready to crank out a recipe!
