4 Simple Steps: Mediterranean Scramble

  • 3/4 cup (about 6 large) egg whites
  • 3 cups chopped spinach
  • 1/2 cup seeded and chopped tomato
  • 2 tablespoons sliced olives
  • 2 tablespoons crumbled feta cheese
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon oregano
  1. In a medium bowl, use a form to whisk eggs with seasonings
  2. Bring a skillet sprayed with non-stick spray to medium heat. Add spinach and tomato. Cook and stir until tomato is soft and spinach has wilted, 1-2 minutes
  3. Add seasoned egg. Scramble for 2-3 minutes, until fully cooked
  4. Stir in olives and feta, and cook and until hot, about 30 seconds
