60-Second Egg

Balanced sources of protein and healthy fats, eggs are one of nature’s most perfect foods. For a complete breakfast, serve one egg with toast triangles and a bit of fruit.


  • Unsalted butter or olive oil for greasing the ramekin
  • 1 egg
  • Pinch salt
  • Freshly ground pepper. To taste.


  1. Lightly grease a 4-ounce ramekin or small bowl with butter or olive oil. Crack the egg into the ramekin. Sprinkle in salt and pepper to taste, and stir with a fork.
  2. Cover with a paper towel and microwave for 45 to 60 seconds, depending on the level of doneness you prefer. Take care removing the ramekin from the microwave, since it will be hot. Using a fork, gently transfer the egg to a plate, cool briefly, and serve.
