Ingredients:
- 5 cups riced cauliflower
- 3 cups frozen petite mixed vegetables
- One 14.5-ounce can fire-roasted diced tomatoes (not drained)
- 6 ounces (about 2 links) fully cooked chicken sausage, sliced into coins
- 1 tablespoon chopped garlic
- 6 ounces (about 12) raw large shrimp, peeled, tails removed, deveined
- 1\2 teaspoons Cajun seasoning
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper
- Bring an extra-large skillet sprayed with nonstick spray to medium-high heat. Add all ingredients and seasoning except shrimp. Cook and stir until cauliflower has softened and frozen veggies have thawed, 10-12 minutes
- Add shrimp. Cook and stir for about 4 minutes, until shrimp are cooked through and entire dish is hot.
