2 Easy Steps: Skillet Jambalaya

Serves: 6
Prep: 10 minutes
Cook: 20 minutes


  • 5 cups riced cauliflower
  • 3 cups frozen petite mixed vegetables
  • One 14.5-ounce can fire-roasted diced tomatoes (not drained)
  • 6 ounces (about 2 links) fully cooked chicken sausage, sliced into coins
  • 1 tablespoon chopped garlic
  • 6 ounces (about 12) raw large shrimp, peeled, tails removed, deveined
  • 1\2 teaspoons Cajun seasoning
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  1. Bring an extra-large skillet sprayed with nonstick spray to medium-high heat. Add all ingredients and seasoning except shrimp. Cook and stir until cauliflower has softened and frozen veggies have thawed, 10-12 minutes
  2. Add shrimp. Cook and stir for about 4 minutes, until shrimp are cooked through and entire dish is hot.
