4 Easy Steps: Slow-Cooker Chicken Veggie Soup

Serves: 8
Prep: 10 minutes
Cook: 3-4 hours or 7-8 hours


  • 1 1/4 pounds raw boneless skinless chicken breast
  • 6 cups reduced-sodium chicken broth
  • 1 1/2 cups sliced carrots
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 2 teaspoons chopped garlic
  • 1/4 teaspoon each salt and black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground thyme
  1. Place chicken in a slow cooker, and season with salt and pepper. Add remaining ingredients and seasonings, and mix well.
  2. Cover and cook on high for 3 to 4 hours or on low for 7 to 8 hours, until chicken is fully cooked.
  3. Transfer chicken to a large bowl. Shred with two forks.
  4. Return chicken to the slow cooker, and mix well.
