Maximize your cooking time by steaming extra broccoli florets. Store them in the fridge for up to three days and serve later with more avocado dip, or toss in a salad
Ingredients: Makes about 1/2 cup avocado dip
- 1/2 cup broccoli florets
- 1/2 avocado
- 2 tablespoons plain greek yogurt
- 2 tablespoons maynonnaise
- 1 teaspoon lime juice
- In a medium saucepan, bring 2 inches of water to a simmer. Place a steamer basket over the water. Add the broccoli florets. Cover and steam until tender, about 5 minutes. Transfer to a plate.
- Add the avocado, yogurt, mayonnaise, and lime juice to a food processor or blender. Process until smooth, adding a tablespoon or more water if needed to help it blend. Serve 2 tablespoons avocado dip with the broccoli.
